Egg White Bites

A high protein breakfast to start your day!

Inspired by the many Starbucks Sous Vide Egg Bites consumed during study sessions.

Ingredients:

Per 14 egg white bites:

  • 1 large red bell pepper, cut in half, stem removed, seeds removed
  • 3 cups egg whites
  • 1 cup spinach, finely chopped
  • 3/4 cup pepper jack or colby jack cheese (I used vegan colby jack)

Instructions:

  • Preheat the oven to 425 degrees.

  • Place the bell pepper open side up in a parchment paper lined baking dish.

  • Roast for ~15 minutes. Flip the peppers on their stomach and roast for another ~15 minutes.

  • Remove from the oven and set aside to cool.

  • Reduce the oven temperature to 325 degrees.

  • When peppers have cooled, dice them. Add the chopped spinach and diced peppers to a small bowl.

  • Grease your egg mold lightly with oil. I used two silicone egg molds that hold 7 egg bites each.

  • Divide the spinach/pepper mixture into 14 parts in the egg bite mold. Pour the egg whites on top.

  • Top with the cheese.

  • Fill two 8x8 baking dishes halfway with water and place your egg mold inside the dish.

  • Bake for 50-60 minutes until the egg whites have set.

  • Set aside to cool, and then carefully remove from the mold. Serve warm!
