A high protein breakfast to start your day!
Inspired by the many Starbucks Sous Vide Egg Bites consumed during study sessions.
Ingredients:
Per 14 egg white bites:
- 1 large red bell pepper, cut in half, stem removed, seeds removed
- 3 cups egg whites
- 1 cup spinach, finely chopped
- 3/4 cup pepper jack or colby jack cheese (I used vegan colby jack)
Instructions:

Preheat the oven to 425 degrees.

Place the bell pepper open side up in a parchment paper lined baking dish.
- Roast for ~15 minutes. Flip the peppers on their stomach and roast for another ~15 minutes.

Remove from the oven and set aside to cool.

Reduce the oven temperature to 325 degrees.

When peppers have cooled, dice them. Add the chopped spinach and diced peppers to a small bowl.

Grease your egg mold lightly with oil. I used two silicone egg molds that hold 7 egg bites each.

Divide the spinach/pepper mixture into 14 parts in the egg bite mold. Pour the egg whites on top.
- Top with the cheese.
- Fill two 8x8 baking dishes halfway with water and place your egg mold inside the dish.

Bake for 50-60 minutes until the egg whites have set.

Set aside to cool, and then carefully remove from the mold. Serve warm!
