Made this for a brunch potluck!
The recipe I used is adapted from Downshiftology.
Ingredients:
Per 12:
- 6 eggs
- 4 tablespoons mayonnaise
- 1 teaspoon dijon mustard
- 1.5 teaspoons vinegar
- salt, to taste
- pepper, to taste
- 1 teaspoon cilantro paste (optional)
- paprika, for garnish
Instructions:
- Bring water to boil in a pot. Add your eggs and leave them in for 14 minutes.
- Meanwhile, combine the mayonnaise, mustard, vinegar, salt, pepper, and cilantro paste in a bowl.

Once 14 minutes are up, place the eggs in an ice bath immediately and let them cool completely.

When cooled, peel them and slice in half.
- Scoop out the egg yolks.

In a bowl, mash the egg yolks until smooth. Then, combine with the mayonnaise mixture.

You can then either spoon the mixture into the hollow part of the eggs or pipe them in.

Finish by garnishing with paprika and enjoy!
