Deviled Eggs

Made this for a brunch potluck!

The recipe I used is adapted from Downshiftology.

Ingredients:

Per 12:

  • 6 eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1.5 teaspoons vinegar
  • salt, to taste
  • pepper, to taste
  • 1 teaspoon cilantro paste (optional)
  • paprika, for garnish

Instructions:

  • Bring water to boil in a pot. Add your eggs and leave them in for 14 minutes.

  • Meanwhile, combine the mayonnaise, mustard, vinegar, salt, pepper, and cilantro paste in a bowl.

  • Once 14 minutes are up, place the eggs in an ice bath immediately and let them cool completely.

  • When cooled, peel them and slice in half.

  • Scoop out the egg yolks.

  • In a bowl, mash the egg yolks until smooth. Then, combine with the mayonnaise mixture.

  • You can then either spoon the mixture into the hollow part of the eggs or pipe them in.

  • Finish by garnishing with paprika and enjoy!
