Another variation on my usual, 4 times a week, avocado toast!
Ingredients:
- 2 slices of bread (I use whole wheat)
- 1 small roma tomato, sliced
- handful of baby spinach, chopped
- 1 avocado, cut lengthwise
- 1 teaspoon Trader Joe’s 21 Seasoning Salute
- handful of mozzarella cheese (I used the vegan kind)
Instructions:

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and assemble the toast there.

Add the tomatoes to both slices of bread.
- Add the spinach on top of the tomatoes.
- Add 1/2 avocado to each slice of bread. Top with the seasoning (or any other seasonings that you like)
- Finally, add the cheese. Bake for ~5-7 minutes, and then broil for a minute or two to brown the cheese. Vegan cheese, sadly, does not brown like non-vegan cheese so that’s a bit of a lost cause for us non-dairy folk.
