Quick and easy dinner recipe!

Ingredients:

Per 3-4 servings:

  • 6 oz lo mein noodles
  • 1 tablespoon soy sauce
  • 1/4 cup chicken or vegetable broth
  • 1 teaspoon cornstarch
  • 1/2 teaspoon minced ginger
  • 1 teaspoon sugar
  • 1 teaspoon Chinese five spice blend
  • 1 tablespoon avocado oil
  • 1 teaspoon minced garlic
  • 1 green bell pepper, sliced lengthwise and cut in half
  • 2-3 green onions, chopped
  • 1/2 small white onion, diced
  • 1 cup shredded carrots
  • 2 oz baby spinach
  • salt, to taste
  • pepper, to taste

Instructions:

  • Cook the noodles according to directions on the package. Drain and set aside.

  • In a small bowl, combine the soy sauce, broth, cornstarch, ginger, sugar, and 5 spice blend. Set aside

  • In a nonstick pan or wok, heat the oil and add the garlic. Cook for a minute or two, and then add the bell peppers, green onions, white onion, and carrots. Cook for ~5 minutes, stirring occasionally, and then add the spinach. Cook for a few minutes until wilted.

  • Add the sauce/seasoning mix along with the noodles and toss to combine. Remove from heat and serve!
