Quick and easy dinner recipe!
Ingredients:
Per 3-4 servings:
- 6 oz lo mein noodles
- 1 tablespoon soy sauce
- 1/4 cup chicken or vegetable broth
- 1 teaspoon cornstarch
- 1/2 teaspoon minced ginger
- 1 teaspoon sugar
- 1 teaspoon Chinese five spice blend
- 1 tablespoon avocado oil
- 1 teaspoon minced garlic
- 1 green bell pepper, sliced lengthwise and cut in half
- 2-3 green onions, chopped
- 1/2 small white onion, diced
- 1 cup shredded carrots
- 2 oz baby spinach
- salt, to taste
- pepper, to taste
Instructions:

Cook the noodles according to directions on the package. Drain and set aside.

In a small bowl, combine the soy sauce, broth, cornstarch, ginger, sugar, and 5 spice blend. Set aside
- In a nonstick pan or wok, heat the oil and add the garlic. Cook for a minute or two, and then add the bell peppers, green onions, white onion, and carrots. Cook for ~5 minutes, stirring occasionally, and then add the spinach. Cook for a few minutes until wilted.
- Add the sauce/seasoning mix along with the noodles and toss to combine. Remove from heat and serve!
