Ingredients:
Per 2 servings:
- 1/4 lb orzo (or other pasta of choice)
 - 2 tablespoons olive oil
 - 1 shallot, minced
 - pepper, to taste
 - handful of parsely, chopped, plus some extra as garnish
 - 3 oz Boursin garlic and herbs (I used this dairy free version)
 - 1 teaspoon Italian seasoning blend
 - handful of shredded mozzarella (optional, sub dairy free)
 - salt, to taste
 
Instructions:
- 
    
Cook orzo according to instructions and reserve ~1 cup of pasta water before draining.
 - 
    
In an pan, heat your oil and add shallots. Cook for a few minutes until they soften and begin to caramelize.
 

- Add pepper and parsley, and cook for another minute.
 

- 
    
Add boursin, ~1/2 cup reserved pasta water, and Italian seasoning. Mix to create a sauce, and then add orzo. Add more pasta water if needed to get the right consistency.
 - 
    
Add the mozzarella, if using, and mix to incorporate.
 

- Garnish with some more pepper and/or parsley, and enjoy!
