Creamy Shallot Orzo

Ingredients:

Per 2 servings:

  • 1/4 lb orzo (or other pasta of choice)
  • 2 tablespoons olive oil
  • 1 shallot, minced
  • pepper, to taste
  • handful of parsely, chopped, plus some extra as garnish
  • 3 oz Boursin garlic and herbs (I used this dairy free version)
  • 1 teaspoon Italian seasoning blend
  • handful of shredded mozzarella (optional, sub dairy free)
  • salt, to taste

Instructions:

  • Cook orzo according to instructions and reserve ~1 cup of pasta water before draining.

  • In an pan, heat your oil and add shallots. Cook for a few minutes until they soften and begin to caramelize.

  • Add pepper and parsley, and cook for another minute.

  • Add boursin, ~1/2 cup reserved pasta water, and Italian seasoning. Mix to create a sauce, and then add orzo. Add more pasta water if needed to get the right consistency.

  • Add the mozzarella, if using, and mix to incorporate.

  • Garnish with some more pepper and/or parsley, and enjoy!
