Spanakopita Egg Toast

(Had to fold my egg in half to hide my ruptured yolk)

Ingredients:

Per ~3 toasts:

  • Bread of choice (I used ciabatta)
  • 1 tablespoon olive oil
  • 1/4 red onion
  • 2 garlic cloves, minced
  • ~8 oz frozen spinach, defrosted
  • 1/4 cup parsley, chopped
  • 1/4 cup scallions, chopped
  • 3/4 cup feta, crumbled
  • salt, to taste
  • pepper, to taste
  • 3 eggs

Instructions:

  • Heat oil in a pot and add your red onions.

  • Cook for a few minutes and then add the garlic. Cook for a few more minutes, stirring frequently, until onions caramelize.

  • Drain as much water as you can out of your defrosted spinach and add to the pot. Give it a good stir and remove pot from heat.

  • Add the parsley, scallions, feta, salt, and pepper. Mix until well combined and set aside.

  • For each serving, toast your bread and spread a generous amount of spinach/feta mixture on top.

  • Lightly grease a pan and fry your egg(s). Season the egg with salt and pepper, to taste.

  • Place your fried egg on top of your toast.

  • Voila!

  • Enjoy!
