Greek Chickpea Salad

A salad that needs no dressing (but I included one just in case)

Ingredients:

Per 4 servings:

  • 1 15-oz can of chickpeas, drained and rinsed
  • 2 cups persian cucumbers, diced (peeling optional)
  • 1.5 cups cherry tomatoes, quartered
  • 1 red onion, diced
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 2 teaspoons dried parsley
  • 1 teaspoon 21 Seasoning Salute seasoning blend, from Trader Joe’s (optional)

For the dressing:

  • 2 tablespoons olive oil
  • 1/2 cup greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • salt, to taste
  • pepper, to taste

Instructions:

  • In a small mixing bowl, combine all of the ingredients for the salad and mix.

  • In a small bowl, combine all of the ingredients for the dressing, if using.

  • Serve salad by itself or toss it with the dressing. Enjoy!
