A salad that needs no dressing (but I included one just in case)
Ingredients:
Per 4 servings:
- 1 15-oz can of chickpeas, drained and rinsed
- 2 cups persian cucumbers, diced (peeling optional)
- 1.5 cups cherry tomatoes, quartered
- 1 red onion, diced
- 1/2 cup black olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 2 teaspoons dried parsley
- 1 teaspoon 21 Seasoning Salute seasoning blend, from Trader Joe’s (optional)
For the dressing:
- 2 tablespoons olive oil
- 1/2 cup greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon oregano
- salt, to taste
- pepper, to taste
Instructions:

In a small mixing bowl, combine all of the ingredients for the salad and mix.

In a small bowl, combine all of the ingredients for the dressing, if using.

Serve salad by itself or toss it with the dressing. Enjoy!
