Heavy on the tzatziki!
Ingredients:
Per wrap:
- 1 pita bread
- 1/2 can (~5 oz) Trader Joe’s Greek chickpeas with cumin and parsley (this one, or you can use regular chickpeas and season yourself).
- Handful of spinach, chopped
- A few cherry tomatoes, diced
- Handful of diced english cucumber
- 1/4 cup tzatziki (I used the vegan kind from Trader Joe’s here, but you can also make it yourself using this recipe).
- 1 parsley stem, chopped, as garnish (optional)
Instructions:
- Heat your pita and then add chickpeas in the center.
- Optional step: use the back of your fork to mash the chickpeas.
- Add the chopped spinach.
- Add the tomatoes and cucumbers.
- Top with tzatziki and garnish with parsley, if using.
- Enjoy!
