Tomato Pasta Salad

Side salad that comes together so very quickly.

My mother’s recipe - thanks, mom!

Ingredients:

Makes ~2-3 servings:

Ingredients:

  • 1/2 cup dry pasta of choice (we used elbows)
  • 1 tablespoon olive oil
  • 1/2 yellow bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 cup tomato puree
  • salt, to taste
  • pepper, to taste
  • handful of finely chopped parsley
  • 1 teaspoon cayenne, chili flakes, paprika powder
  • 2 teaspoons oregano

Instructions:

  • Cook pasta according to directions. When cooked, strain excess water and run the pasta under cold water to cool.

  • In a pan, heat olive oil. Add bell peppers and saute for a few minutes. Add tomato puree and cook for another few minutes. Remove from heat.

  • In a bowl, combine your pasta, bell pepper + tomato puree mix, and all of your seasonings. Eat as is or after cooling in the refrigerator for a few hours.
