The closest resemblance to my favorite pasta salad from back in India.
Ingredients:
Makes ~4 servings:
- 1 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1 cup corn
- 1 cup cooked pasta, drained and rinsed with cold water (I used elbows)
- 1/2 cup shredded colby jack cheese (or other desired cheese, optional)
- 4 tablespoons Thousand Island salad dressing
- 1/2 teaspoon oregano
- 1/2 teaspoon italian seasoning
- salt, to taste
Instructions:
- Combine all of the ingredients and toss. Serve cold and enjoy!
