The closest resemblance to my favorite pasta salad from back in India.

Ingredients:

Makes ~4 servings:

  • 1 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1 cup corn
  • 1 cup cooked pasta, drained and rinsed with cold water (I used elbows)
  • 1/2 cup shredded colby jack cheese (or other desired cheese, optional)
  • 4 tablespoons Thousand Island salad dressing
  • 1/2 teaspoon oregano
  • 1/2 teaspoon italian seasoning
  • salt, to taste

Instructions:

  • Combine all of the ingredients and toss. Serve cold and enjoy!
