Pesto Couscous Salad

Couscous is one of my favorite salad ingredients!

Ingredients:

Makes 1 serving:

  • 1 cup couscous, cooked according to directions on package (I like to use Israeli couscous from Trader Joe’s)
  • 1/2 pint cherry tomatoes, chopped
  • 1/2 English cucumber
  • 4 tablespoons pesto (I like to use Genovese Pesto)
  • 1/2 cup feta (sub dairy free)
  • 1 teaspoon garlic powder
  • salt, to taste
  • pepper, to taste

Instructions:

  • Combine all of your ingredients in a bowl. Mix and serve!
