Couscous is one of my favorite salad ingredients!
Ingredients:
Makes 1 serving:
- 1 cup couscous, cooked according to directions on package (I like to use Israeli couscous from Trader Joe’s)
- 1/2 pint cherry tomatoes, chopped
- 1/2 English cucumber
- 4 tablespoons pesto (I like to use Genovese Pesto)
- 1/2 cup feta (sub dairy free)
- 1 teaspoon garlic powder
- salt, to taste
- pepper, to taste
Instructions:
- Combine all of your ingredients in a bowl. Mix and serve!
