Roasted Smashed Potatoes

Interchangeable with french fries or breakfast potatoes!

Ingredients:

Per 3-4 servings:

  • 1 lb baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon Trader Joe’s 21 seasoning salute
  • 1 teaspoon rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon parsley
  • 1/2 teaspoon chili powder

Instructions:

  • Boil the potatoes - add cold water to a large pot, add the potatoes, and cook on medium heat for ~20 minutes until potatoes are tender.

  • Preheat the oven to 425 degrees.

  • In a small bowl, combine the rest of the ingredients.

  • When the potatoes have cooked, drain and transfer to the oil and herb mixture. Mix to coat all of the potatoes.

  • Line a baking sheet with parchment paper and then transfer the potatoes over there.

  • Using the bottom of a measuring cup, a bowl, or any such instrument, press each potato down to smash.

  • Place in the oven for 20-25 minutes until roasted.

  • Transfer to a bowl or plate and enjoy!
