Interchangeable with french fries or breakfast potatoes!
Ingredients:
Per 3-4 servings:
- 1 lb baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon Trader Joe’s 21 seasoning salute
- 1 teaspoon rosemary
- 1/2 teaspoon garlic powder
- 1/2 teaspoon parsley
- 1/2 teaspoon chili powder
Instructions:
- Boil the potatoes - add cold water to a large pot, add the potatoes, and cook on medium heat for ~20 minutes until potatoes are tender.

Preheat the oven to 425 degrees.

In a small bowl, combine the rest of the ingredients.
- When the potatoes have cooked, drain and transfer to the oil and herb mixture. Mix to coat all of the potatoes.
- Line a baking sheet with parchment paper and then transfer the potatoes over there.
- Using the bottom of a measuring cup, a bowl, or any such instrument, press each potato down to smash.
- Place in the oven for 20-25 minutes until roasted.
- Transfer to a bowl or plate and enjoy!
