Ingredients:

Per serving:

  • 1 serving of your chosen noodles (I used thin udon)
  • 1-2 scallions, chopped
  • 1 garlic clove, minced
  • chili flakes, to taste (only if you, unlike me, have a very high spice tolerance)
  • 2 tablespoons sesame oil
  • 2 tablespoons red curry paste (I used Thai Kitchen brand)
  • 1 tablespoon rice vinegar (optional)
  • 1 tablespoon soy sauce
  • 1.5 tablespoons basil paste (or use a handful of fresh basil if you have it)
  • 1 teaspoon sesame seeds, as garnish

Instructions:

  • Cook the noodles according to directions on the package. Drain and set aside.

  • In a bowl, add the scallions, garlic, sesame seeds, and chili flakes (if using). Pour your hot sesame oil over it and give it a mix.

  • Add your red curry paste, rice vinegar, soy sauce, and basil. Give it another good stir.

  • Add your noodles to the sauce and stir to combine.

  • Enjoy!
