Ingredients:
Per serving:
- 1 serving of your chosen noodles (I used thin udon)
- 1-2 scallions, chopped
- 1 garlic clove, minced
- chili flakes, to taste (only if you, unlike me, have a very high spice tolerance)
- 2 tablespoons sesame oil
- 2 tablespoons red curry paste (I used Thai Kitchen brand)
- 1 tablespoon rice vinegar (optional)
- 1 tablespoon soy sauce
- 1.5 tablespoons basil paste (or use a handful of fresh basil if you have it)
- 1 teaspoon sesame seeds, as garnish
Instructions:

Cook the noodles according to directions on the package. Drain and set aside.

In a bowl, add the scallions, garlic, sesame seeds, and chili flakes (if using). Pour your hot sesame oil over it and give it a mix.
- Add your red curry paste, rice vinegar, soy sauce, and basil. Give it another good stir.

Add your noodles to the sauce and stir to combine.
