Pretty good as a side or as your whole meal!

Ingredients:

Per 3-4 servings:

  • 1 cup chopped baby spinach
  • 1/2 cup corn
  • 1 cup cherry tomatoes, quartered
  • 1 avocado, cubed
  • 1 shallot, minced
  • 1/2 English cucumber, diced
  • 1 tablespoon olive oil
  • 1 teaspoon Trader Joe’s 21 Seasoning Salute
  • 1 teaspoon Dash’s Chipotle Southwest seasoning blend
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon dried cilantro or handful of chopped fresh cilantro
  • salt, to taste
