Ingredients:
Per 3-4 servings:
- 1 cup chopped baby spinach
- 1/2 cup corn
- 1 cup cherry tomatoes, quartered
- 1 avocado, cubed
- 1 shallot, minced
- 1/2 English cucumber, diced
- 1 tablespoon olive oil
- 1 teaspoon Trader Joe’s 21 Seasoning Salute
- 1 teaspoon Dash’s Chipotle Southwest seasoning blend
- 1 teaspoon cajun seasoning
- 1/2 teaspoon dried cilantro or handful of chopped fresh cilantro
- salt, to taste
